Chickpea Power Salad
Color, texture, and crunch! This chickpea and sweet potato power salad has it all! We’re using red onions, cilantro, dates, and feta to make this salad extra special! Serve as a main course or as a side.

We take our salads seriously around here. So much goodness loaded into this one salad guys.
1 Can of chickpeas, rinsed and drained
1⁄2 Cup of Feta
1⁄2 Cup of Onions, diced
1⁄2 Cup of sweet potatoes,diced and roasted
1⁄3 Cup cilantro, finely chopped
For the dressing:
1⁄3 Cup chopped dates
Salt to taste
Pepper to taste
1⁄3 Tbsp Olive oil
1 Tbsp of Honey
2 Tsp, Grainy Dijon Mustard
2 Tsp, Lemon Juice
Cook the chickpeas until soft, allow it to completely cool before tossing with salad ingredients.
Drizzle some olive oil, salt and pepper over the diced sweet potatoes and massage them so each piece is evenly coated.
Line the sweet potatoes on sheet pan.
Roast in the oven for about 30mins at 425 F (make sure it is cool before mixing with dressing)
Meanwhile, throw all the dressing ingredients in a blender.
Drizzle the dressing into the salad and toss the salad to combine everything.
Sprinkle some feta and cilantro
You can also add Quinoa, but when
doing so REMEMBER when preparing the quinoa, add a teaspoon of oil and sauté the quinoa for about 1 minute before adding the water and cooking. This gives the quinoa a really great nutty/toasted flavor which goes really well with the flavors of this salad!
